PENGENDALIAN KUALITAS PRODUKSI TAHU DENGAN PENERAPAN GOOD MANUFACTURING PRACTICES (GMP) DAN FAILURE MODE AND EFFECT ANALYSIS (FMEA) (STUDY KASUS UKM TAHU KEC. TULANGAN)

Tahu merupakan salah satu hasil industri makanan yang banyak dikonsumsi oleh masyarakat karena dianggap makanan murah meriah tapi sangat bergizi. UMKM tahu Ds Ngemplak Kec Tulangan merupakan usaha rumahan di bidang pangan yang
memproduksi tahu, namun belum menerapkan standar jaminan mutu Good Manufacturing Practices (GMP). Langkah yang diperlukan untuk meningkatkan daya saing produk dan kepercayaan konsumen, dalam meningkatkan kesadaran dan motivasi produsen serta karyawan terhadap pentingnya pengolahan pangan yang higienis dan keselamatan konsumen. Oleh karena itu perlu diperhatikan dari tiga hal pokok yang sangat mempengaruhi tingkat keberhasilan produk pasaran. Tiga hal pokok tersebut merupakan harga, ketersediaan, dan mutu. Untuk mewujudkan sistem mutu dan keamanan pangan, salah satunya dengan Good Manufacturing Practices (GMP) atau cara produksi pangan yang baik. Penelitian ini bertujuan
untuk mengetahui kualitas produksi yang dihasilkan. Dengan Penerapan GMP yang menjadi prioritas di UMKM tahu Ds Ngemplak Kec Tulangan. Penelitian ini menggunakan metode deskriptif dengan Analisa kuantitatif. Untuk pengambilan
data dilakukan dengan metode survey dan observasi dengan data sekunder yang diperoleh. Hasil analisis penentu parameter dihitung dengan menggunakan metode Failure Mode And Effect Analysis berdasarkan Good Manufacturing Practice
(GMP). Berdasarkan hasil Analisa penerapan Good Manufacturing Practices terhadap UMKM Tahu Kec Tulangan yang sudah dijalankan sebesar 54 % dan yang belum menjalankan sebesar 47 %. Setelah diidentifikasi bahaya yang tertinggi berada pada tahu dengan mengguanakan Failure Mode Effect Analysis yang dapat memperngaruhi pada tahu ditemukan penyebab tertinggi tedapat pada proses penggilingan kedelai dengan nilai RPN sebesar 405 yaitu pada mesin penggiling
terdapat karatan dan kotoran yang nempel pada mesin. Penelitian ini mempunyai tujuan yaitu dengan memeberikan usulan perbaikan Standar Operational Prosedur untuk karyawan pada saat produksi tahu.

Tofu is one of the products of the food industry that is widely consumed by the public because it is considered cheap but very nutritious food. MSME tofu Ds Ngemplak Kec Tulangan is a home-based business in the food sector that produces
tofu, but has not implemented Good Manufacturing Practices (GMP) quality assurance standards. Steps needed to increase product competitiveness and consumer confidence, in increasing awareness and motivation of producers and employees regarding the importance of hygienic food processing and consumer safety. Therefore, it is necessary to pay attention to three main things that greatly influence the level of success of market products. The three main things are price, availability and quality. To create a quality and food safety system, one of them is Good Manufacturing Practices (GMP) or good food production methods. This research aims to determine the quality of the production produced. With the implementation of GMP which is a priority in MSMEs, you know Ds Ngemplak, Tulangan District. This research uses descriptive methods with quantitative analysis. Data collection was carried out using survey and observation methods with secondary data obtained. The results of the analysis of determining parameters are calculated using the Failure Mode And Effect Analysis method based on Good Manufacturing Practice (GMP). Based on the results of the analysis of the implementation of Good Manufacturing Practices for Tahu District MSMEs that have been implemented, 54% have been implemented and 47% have not been implemented. After identifying the highest danger in tofu by using Failure Mode Effect Analysis which can affect tofu, the highest cause was found in the soybean grinding process with an RPN value of 405, namely in the grinding machine there was rust and dirt stuck to the machine. This research aims to provide suggestions for improving Standard Operational Procedures for employees during tofu production.
