Abstract

Penelitian ini pada dasarnya dilandasi oleh pemikiran bahawa keamanan pangan dengan tujuan dari penelitian ini adalah untuk mengetahui tentang sistem pengendalian kualitas dengan metode Good Manufacturing practices (GMP) di PT. Indo Lautan makmur. Penelitian ini menggunakan metode kualitatif untuk mendeskripsikan bagaimana kesenjangan penerapan sistem GMP sesuai dengan Peraturan Menteri Perindustrian Nomor 75/MIND/PER/7/2010 terdapat beberapa aspek yaitu lokasi, bangunan, fasilitas sanitasi, mesin/peralatan, bahan, pengawasan proses, produk akhir, laboratorium, karyawan, pengemas, label, dan keterangan produk, penyimpanan serta program sanitaasi serta menetapkan rekomendasi alternatif strategi yang harus dilakukan untuk perbaikan pengendalian kualitas.
Berdasarkan analisis dari hasil penelitian pada pelaksanaan GMP dengan pengendalian kualitas di perusahaan sosis memiliki kategori cukup sedang dengan hasil penelitian rata- rata sebesar 74%. Rekomendasi alternatif strategi pada GMP
untuk memperbaiki pengawasan dalam bahan baku, pemeliharaan mesin dan meningkatkan kinerja pada produksi.

This research is basically based on the idea that food safety with the purpose of this research is to find out about the quality control system using the good Manufacturing Practices (GMP) method at PT. Indo Lautan Makmur. This study uses a qualitative method to describe how the gaps in the implementation of the GMP system are in accordance with the Regulation of the minister of industry Number 75/MINS/PER/7/2010 there are several aspects, namely location, buildings, sanitation facilities, machinery/equipment, material, process control, final product, final product, laboratories, employees, packaging,
labels and product descriptions, storage and sanitation programs as well as establishing recommendations for alternative strategies that must be implemented to improve quality control. Based on the analysis of the results of research on the implementation of GMP with quality control in sausage companies, it has a fairly moderate category with an average research result of 74%. Recommendations for alternative strategies on GMP to improve control of raw materials, machine maintenance and improve production performance.
